I am the co-owner of Power of the Almond alongside our founder and co-owner, Mr. Kirk Hutchinson. I officially entered this partnership about a year ago.
What inspired this venture stems from personal experiences for both of us. Kirk is diabetic.
During the COVID-19 pandemic, he felt severely limited in the foods he could enjoy. In response, he developed our very first low-carb pound cake recipe and began selling it at local farmers markets.
Five years later, we are preparing to open our second retail location. Kirk recognized that he was filling a critical need in Mississippi that no other bakery was addressing. Once we began shipping our products, we realized that this demand extended nationwide.
When I joined the company, our combined skill sets created the ideal balance for operational efficiency and scalable growth.

Supporting people with diabetes is deeply personal to me. My sister and my father both live with diabetes, as did three out of my four grandparents.
Historically, finding safe snacks and desserts has been a major challenge for diabetics; there was a time when they had virtually no options.
One of the most rewarding parts of this work was experiencing our products alongside my own family and watching my father and sister enjoy a Bundt cake without worry.
Although I initially came on board simply to support Kirk as a friend, my perspective transformed about two weeks into the role.
A customer came in wanting to purchase a birthday cake for her late daughter’s heavenly birthday. Everyone in her family had diabetes, and she shared that they had not been able to share a whole birthday cake together in 15 to 20 years.
Being able to provide a treat that would not spike their blood sugar was profound. Helping people with diabetes enjoy food again—and reaching the millions of diabetics who still do not know we exist—is what keeps me motivated every day.

Community involvement and paying it forward are essential to our philosophy. When you show up for the community, the community shows up for you.
We also believe it is our responsibility to educate the public about the healthy options available to them.
Creating a strong community begins internally with our team. Success comes down to team alignment and the value we invest in our staff.
From the head chef and pastry team who develop the recipes, to the bakers who produce them, to the logistics staff packaging each order—every single person at Power of the Almond shares a dedicated commitment to the diabetic community.
Looking to the future, our primary goal is to establish regional production and fulfillment facilities across every region of the United States.
Because we avoid heavy artificial preservatives, our baked goods have a natural two-week shelf life. Currently, depending on the destination, national shipping can take 5 to 6 business days.
We already serve the Southern region with 2-to-3-day delivery windows; our primary objective now is to establish dedicated facilities on the East Coast, the West Coast, and in the Northern United States so we can guarantee two-day delivery for all customers nationwide.

We do not just bake treats; we carefully curate and control every ingredient to ensure they do not cause blood sugar spikes.
We exclusively use Bob’s Red Mill products, including aluminum-free baking powder, to protect our customers from common additives and allergens.
We rely on premium almond flour to cater to both gluten-free and diabetic dietary needs.
Above all, I want our readers to understand the care and rigorous research behind every product we develop.
Sometimes you have to provide what is best for people to help them make better health decisions.
For example, in our lemon blueberry loaf, we balance multiple nutritional factors: keeping total carbohydrates and sugars low, while still incorporating real blueberries in carefully measured portions.
As Head of Operations, seeing the strategic dedication of our head chef, pastry chefs, and baking team translate into genuine care for our customers is what makes this work meaningful.
